Pistachio date balls

  • 11 dates, medjool for preference
  • 100g shelled pistachios
  • 1 tbsp honey
  • 0.5 tsp macha powder
  • 1 pinch coarse sea salt
  • 100g dark chocolate

What we did:

  • Blitz the pistachios in a food processor
  • Reserve 25g for decoration
  • Blitz the dates, matcha powder, salt, and honey until well combined
  • Add the 75g pistachios and blitz again
  • Roll tablespoon scoops of mixture into balls - makes about 9
  • Melt the chocolate and pour over
  • Sprinkle with chopped pistachios
  • Put in fridge or freezer

What we’d change:

  • The chocolate was a little overpowering
    • Use non-baking chocolate
    • Use milk chocolate
    • Thin the chocolate with some sort of oil
    • Dip the balls rather than pouring - look at Amaury Guichon videos
  • The last two were quite salty – presumably an uneven salt distribution
    • try using table salt
