Pistachio date balls

- 11 dates, medjool for preference
- 100g shelled pistachios
- 1 tbsp honey
- 0.5 tsp macha powder
- 1 pinch coarse sea salt
- 100g dark chocolate
What we did:
- Blitz the pistachios in a food processor
- Reserve 25g for decoration
- Blitz the dates, matcha powder, salt, and honey until well combined
- Add the 75g pistachios and blitz again
- Roll tablespoon scoops of mixture into balls - makes about 9
- Melt the chocolate and pour over
- Sprinkle with chopped pistachios
- Put in fridge or freezer
What we’d change:
- The chocolate was a little overpowering
- Use non-baking chocolate
- Use milk chocolate
- Thin the chocolate with some sort of oil
- Dip the balls rather than pouring - look at Amaury Guichon videos
- The last two were quite salty – presumably an uneven salt distribution
- try using table salt
